This really came out so good. This is the full recipe. I often make it without several of the ingredients to make it quick and easy. Sometimes, I'll just do the noodles, sauce and garlic or scallions. I've also added chicken or shrimp. I love the peanutty sauce. You can add more peanut powder or less. It's very flexible. 2 packages of Konjac noodles 2 T lime juice 3 T. soy/ tamari/ Bragg's aminos 1 squirt of Sriracha sauce (this gives it such a good flavor) 2 t. olive oil or coconut oil 3 scallions, thinly sliced 1 garlic clove, minced 1-2 eggs, scrambled 1/8-1/4 cup cilantro 1 very heaping T. peanut powder Rinse and cook noodles. Mix lime juice, soy, sriracha and peanut powder. Saute scallions and garlic in oil. Add noodles and sauce to pan. Continue to stir and cook until desired consistancy. Add eggs and cilantro.

Modified post to read "1/8-1/4 cup cilantro". I've never actually added the cilantro and I think a T or two might be enough.

i have this on my plate. the noodles smelled so strongly of fish. I tried ot hold my breath long enough to not smell them but it didn't happen. I am afraid to try it!!!!

Ick! The book talks about rinsing the noodles, because of the smell from the packing water. :/

This recipe sounds great but I am scared to try the konjac noodles. Is the texture like kelp noodles? I could never get past the texture with them.

I can't take a whiff when they are just out of the package, and I can still kind of smell them after rinsing. However, once they are covered in the sauce and plenty of peanut powder, I don't smell them anymore. ;D

I've never had the kelp noodles, so I can't help you there. The konjac noodles can be a little bit, well, um, slimy. The peanut powder helps that, I think, because it gives it a different texture.

I'm still waiting to go shopping so I can buy these noodles. When I first heard of these I googled them and came across a YouTube by Josie from the Konjac Cafe. She was very thorough in explaining the properties, textures, and how-to's about these noodles. I don't know if the recipe is plan approved. She did use truvia. I'm suggesting this YouTube because it looked like a very good tutorial for those of us not used to using these noodles. Hope this helps.

Yes, kelp noodles are sort of slimy. They are of the raw food noodles I eat when my SIL makes raw pasta, but I have to choke them down.
Maybe I will try the knojac noodles if I find them at the asian market.
