My sister and I made skinny chocolate and we didn't care too much for it. But I'm not a quitter or afraid to tweak recipes so here's what I ended up with.
My coconut oil is always solid so I put a small pan of water on the stove and put my container of coconut oil in it until it melts and I measure out the 1/2 cup and put it in a cereal bowl. I add the 1/4 cup cocoa and truvia and nunaturals to taste. I don't worry about the gritty texture of the sweetener or it floating. My next step takes care of that. I sit the bowl on the pan of water. My pan is very small so it holds the bowl up out of the water. It heats it nicely and the sweetener dissolves so much better. Then I add heavy cream to taste. I feel like nuts make everything better so I add chopped pecans. Then I stir it up good and its ready to pour onto wax paper. I also like to use candy molds or pour into cookie cutters. After the chocolate sits in the freezer a bit, the chocolate pops out of the candy molds nicely.

hi! that sounds like a hybrid of chocolate nut slab and skinny chocolate. i love both. this is what i have been doing: do just as you say until all ingredients are in in the bowl, mixed. Also, i add a pinch of good sea salt, finely ground. and vanilla, too. then i sit the bowl in ice water. stirring occasionally. it will all of a sudden start to firm around the edges. Then I whisk like crazy. it suddenly gets really thick and pastey. I mix really well and spread into a dish lined with foil and freeze. Sometimes I add nuts, but often, I like to add shredded unsweetened coconut. Yum! happy chocolate eating!
