I just started THM last week, and the first dinner I decided to make was Meatloaf--one of my husband's childhood favorites. I was not raised eating meat so it was my first time cooking it, and I went back and forth between making Serene's recipe or Pearl's. In the end I decided to make a hybrid! I used 1 lb ground turkey meat, because that's what we usually use for tacos or burgers, and I added 2 eggs, salt, pepper, garlic powder, celery, Braggs, and a bit of sour cream. So after mixing a few ingredients from both recipes I decided to up the veggie content and added some steamed and blended broccoli, a handful of blended spinach, and a few finely chopped mushrooms. To finish it off I iced it with tomato paste and added a little bit of water around the loaf as it baked.
The result? VERY tasty! I loved the addition of the tomato paste because we would usually add ketchup but the paste made that unnecessary. The veggies blended very well--only note is that the spinach gave it a SLIGHT green tint, which didn't both us one bit All in all, it was a very yummy dinner and we had left overs for two days to munch on!

steffanie3: Yes kimlopez, some mamas cut back a bit on the Oolong for caffeine and/or folic acid absorption, I personally drank mine a different time of day than my prenatal. I did make it with pregnancy tea as well and enjoyed it very much that way

steffanie3: lindah60 Welcome I think you will find THM very compatable with your diabetes, one thing you might find is you need to do more of a "pulled back E", basically lighter on the E fuel (on plan carbs) to help your blood sugars stay stable. You might also

steffanie3: lauriebovi, a menu plan really helps me even if it is just a daily plan so I kind of know what I will be eating through the day with snacks and meals. Also for me prepping ahead is a super helpful, having a large batch of something to grab when needed
