I adapted my first recipe to THM style today and it was delicious. I am hoping I did it right.
I cooked 2lbs of ground meat with some onion and garlic in a skillet. Added a chopped up head of cauliflower and cooked it until the cauliflower was cooked al dente. I poured this into a crockpot and added about 4cups of chicken broth, a dash (maybe 1/4C) of cream, some garlic powder and sprinkled in some Glucci. After letting it simmer a while I added some shredded mozzarella (maybe a cup) and some chopped up spinach and left it alone until dinner time. This made enough for 2 meals for our family of 4. It was really good, my husband says it is a keeper and he usually doesn't like soup. We ate with a salad topped with olive oil and balsamic vinegar and followed it with 3 very small pieces of rich chocolate fudge.
