Does anyone else find this happens? I get super-sweet and bitter spots in my skinny chocolate no matter how much I stir. I'm wondering if I might have to get the coconut oil to solidify just a bit before adding stevia (or stir it some more as it cools). Other ideas?

Do you use Truvia or nustevia extract? Do you spread your chocolate thin? I know a lot of people have been having similar problems. I have never experiences this. I use the extract powder, and typically spread it reasonably thin.

I had the same issue with Truvia, but the NuStevia Pure Extract doesn't seem to do that. I always mix the stevia and cocoa before adding the coconut oil and that seems to help too. I really like the taste of Truvia in this better, but I am trying to switch to using NuStevia for all my recipes, so it's taking some adjusting in recipes like this.

I'm using NuNaturals pure extract. I will try mixing it with the cocoa first and see what that does. Emily, I do spread my chocolate quite thin, but I am realizing that my last batch was a bit thicker and I noticed the settling more. I'll make sure to keep it nice and thin.

I noticed this with truvia but no so with the NN pure extract powder. I also find it helpful to warm the coconut oil first.

I made Skinny Chocolate for the first time and it is quite bitter! On the FB forum it was suggest that I use Truvia versus NN, but it seems like most of this group are going with the NN, which I don't have yet. I HAVE to place an order soon.

I think I am going to try it with the coconut oil a little softened, but not liquid and see how that works, I like making it in mini muffin tins a bit thicker

I have used liquid stevia w/ success, Nunaturals & Sweetleaf brands are both yummy!

I think it is something like Stevia Juice Concentrate. If you go onto the Facebook page for THM there is an index and you can find the recipe as I do not know it off the top of my head.

Christina, I believe that when you go to the THM FB page they have a set of files put together and one of them has the recipe for the SJC - I think I was wrong and that it is actually Sweet Juice Concenrate, or something like that.
