I used to do Body for Life and one of my favorite meals was Cool Taco Salad. Could this be a FHM recipes too? Ingredients:
Servings: 2
1/2 lb lean ground beef 1 tablespoon water 2 teaspoons taco seasoning mix, divided 2 whole wheat pita bread 2 tablespoons reduced-fat cream cheese, at room temperature 2 tablespoons nonfat sour cream 2 tablespoons salsa 1 cup lettuce 1 tomato, diced 1/4 cup reduced-fat cheddar cheese, shredded
Directions:
1 Preheat oven to 400°F.
2 In a medium skillet, brown ground beef over medium heat until no longer pink. Drain off excess fat. Add water and 1 tsp taco seasoning to the beef and simmer for 3 minutes. Remove from heat and set aside to cool slightly.
3 Cut each pita into 8 wedges and place on baking sheet. Bake for about 7 minutes or until lightly browned.
4 While the beef is cooling, combine the remaining taco seasoning, cream cheese, sour cream and salsa in a small bowl. Mix well. Divide and spread this mixture evenly on 2 small plates.
5 Spoon a portion of the beef over the sour cream mixture, and top each with half the lettuce, tomato and cheddar cheese.
6 Place 8 baked pita wedges on each plate. Serve and enjoy!

You could enjoy this as S with a low carb pita. You could even use full fat ingredients if you wanted to.

Sounds good. since i'm trying to avoid carbs as much as i can right now, I would shred lots of lettuce and place the ingredients on top and then mix; i suppose that's more for presentation purposes. thanks for the post.

I used to do BFL also and I loved it!! Did you ever do the 12 week challenge? I still have Bill Philips BFL recipe book, I'll have to dig it out of the attic!! Thanks for the recipe!!

We have always made a taco salad growing up. It had a can of chili- but can I use the FP Chili or S chili from the book, I normally use ground turkey- then add some taco seasoning to it, to thicken it up. The tons of lettuce, cheese, avocado, olives, a small bit of tomatoes and then a little thousand island dressing. When we were little we used to put Doritos in it, but I was thinking a pita with some nutritional yeast, cut up and toasted in the oven to make chips. Would this work?
