I am just in the first 100 pages of the book and don't know much at all yet, but am trying to prepare our pantry for trying these recipes. I noticed that for at least one recipe, it said glucomannan or xanthan gum. Can xanthan gum always be substituted for glucomannan? How about guar gum? I have a lot of these 2 ingredients, but no glucomannan. I'd like to use up what I have first if it will be effective. Thank you.

I have a similar question: Can guar gum be substituted effectively in the choco pudding recipe?
I have substituted guar in a few of the other recipes (the smoothies come to mind) and it seems to work just fine. Wikipedia says that it is a "galactomannan," so I'm guessing it is very similar to "glucomannan."
I need to take the pudding to a meeting tomorrow, so I sure would like an answer before I waste my almond milk testing the recipe. Planning on making it to go with a mexican themed lunch so I'm going to add cinnamon to it. :-)

YES! It works! And it tastes pretty good, too. I'll pick up some fat-free canned whip topping and no matter what dishes my co-workers bring, we can all eat this pudding guilt-free. :-)

Can it work the other way, too? Can you use glucomannan in place of the xanthan gum?

You can use gluccaomannan and xanthan gum interchangeably most of the time. There are a few circumstances where you cannot, such as in meringues and oopsie rolls. The xanthan gum has particular qualities that are important when beating it with egg whites to achieve the proper texture for those kinds of recipes. Other than that, you can typically use whichever you fancy.

I found that guar gum works well as a replacement for Glucomannan in the puddings and smoothies. Is it ok to use Guar gum instead of Gluccie on THM plan? Guar gum is so much easier to source in NZ.

I just started another thread with the same question about guar gum. Then found this unanswered for a long time. I wonder if anyone knows more about guar gum yet.

Guar gum is pretty much interchangeable with xanthan gum. It has more carbs than gluccie, but it's about the same as xanthan. In small amount it will work on plan.
