It should keep for a good week or two. As long as it smells fresh it should be fine. Ours lasted a while.

what is lemon juice concentrate? It's just pasteurized lemon juice. I usually don't have that so don't include it and mine turns out fine.

It lasts for a long time, several weeks. I just made it again this morning-super yum. I did 1 cup frozen strawberries for the blender, then 2 cups frozen mixed berries from Costco in the saucepan. I didn't have to add more gluccie at the end to thicken like the first time, worked perfectly. Added 6 shakes of the Nustevia. This is the jelly that we use for everyone now.

lemon juice should also work in place of bottled lemons...the tartness of lemon pairs SO well with berries...especially blueberries and raspberries. It really "pops" their flavor.

That's a great idea, Nancy. I made some last night with 1 cup Strawberries, then 2 cups raspberries!! Very good!!
