Since it is an E meal I didn't have any of the S toppings on mine but used all of the E toppings mentioned in the recipe. I did have the S toppings available for my kiddos, well, except the cashew cream, they would have thought I was crazy if I offered that to them I didn't have red quinoa but did have a trio quinoa mix that I used but I am assuming it doesn't change the flavor, just the color of the quinoa.

That looks amazing and so cheery! Thanks for posting. Definitely will try this.
I made an E veggie soup tonight too. It's been unusually cold here in the Pacific northwest, so it was so nice.

Joyfulmomof6 how did you make your E soup? Soup is one of my favorite ways to eat E meals this time of year.

Basically I threw in a bunch of frozen and fresh veggies including some sweet potatoes instead of regular potatoes. I used homemade turkey broth that I made from the Thanksgiving turkey bones. I pureed the whole thing with my immersion blender....my husband and one son won't eat chunky soup.
I agree...E meals are harder.

Lol, my hubby is exactly opposite, a soup without chunks is not food, it's a drink. I love creamy blended soups though but usually save it for lunch or nights hubby has dinner meetings.

It suggest avocado as a garnish. Anyone know off hand how much would be allowed to keep this as a E meal?

Avacado is an S food. It's best to leave it out. I never saw this question asked before, sorry to whoever posted it. I suppose of one would use 1 Tbsp avacado, it would be ok, but most of the time it's good to keep foods in their proper category.
