My Dear Hubby loves buckwheat pancakes. He recently pointed out that some people consider buckwheat a superfood and wants me to incorporate it into our meal plans. I've read up on cooking with buckwheat but am unsure how to consider it. I think it would fit into the S category. Can someone give me some pointers?

Buckwheat is a grain like wheat. It has carbs and would be an E unless you use a tablespoon only and no other carbs with it.

Buckwheat is an E, but I understand it does need to be sprouted. There is a recipe in the book for sprouted granola using buckwheat on page 235-236. This is a S helper when limited to a 1 cup serving.

Why does it need to be sprouted? And how do you use it once sprouted? I just bought some from my food co op thinking I could grind it and use it for making E crackers or something.... Any ideas??
