What would I use for thickening. My thoughts are coconut flower and a little Gucci. I normally use 1/4 cup flour. Or would it be a better option to use cornstarch

I've never used coconut flour for thickening soups...seems like it would be grainy? Let me know if you try it. I know xanthum gum or glucci work well, though.
