It's that time of year Cookie trays 'round here many times have no bake cookies. In fact, I quadrupled the batch and only did just over a cup of oats, but I really do like coconut

Made them many times and made a few tweaks. *Instead of whey protein powder and coconut flour I used oat fiber. (Just today since I'm trying to use more oat fiber and needing to be wiser with my WPP use). *added another egg which made it chewier. Today I tried it with extra yolks and it worked great. Great way to use up those extras. *added peanut butter today after mixing everything together (really wanting a PB treat) it worked very well. *walnuts! So good here. I like walnuts and chocolate. *used 1/2 butter and today all butter for the coconut oil because I was out.

I made the healthy buckeyes today. I posted the recipe above. Here's the link again. lm.facebook.com/l.php?u=http%3A%2F%2Fwww.briana-thomas.com%2Fhealthy-buckeyes%2F&h=AAQGlin7D&s=1These are incredible in taste and texture, never mind very easy, too. *I didn't have coconut oil so I used all butter. *I didn't have great northern beans so I used navy beans. *Instead of all stevia I used 4 Tbsp xylitol (measured and then ground) plus 1/8 tsp THM stevia. Perfect sweetness for me. These got perfectly smooth and fudgy. Not grit from beans and not even from the oat fiber. Of course I'm writing this before they were cold. I sampled a few warm pieces as I rolled them. (they got warm while processing). I used a cookie scoop sized at 2 Tbsp. this gave me 48 balls. I didn't need to refrigerate before scooping and rolling.

Just another update on the buckeye recipe from above. After these balls were refrigerated overnight, they were not as sweet. Next time I would probably add another 2 Tbsp xylitol and 2 doonks stevia. I did not coat them in chocolate they were really fudgy and creamy. If the chocolate were sweet you might not need to add extra sweetener.
