I'm having a really hard time finding beans without a lot of added sugar and processed ingredients. I've heard that it is possible to buy beans in bulk and then soak them overnight...would this be on plan? Any suggestions how much water to use and how long to soak the beans?

Juse put a few extra inches of water in the pot. Leave them soak over night and then rinse them and cook them in the morning. IDK if you HAVE to rinse, but I do.

I know it is recommended to soak, rinse, then cook. I sometimes cheat with a quick soak, by bringing to a boil, turning off and letting set for an hour, then rinsing and cooking. Sometimes I really cheat and turn 'em up high boiling to death and keep adding water! If you think of it ahead of time a crockpot is also great for cooking beans. Also, I used to pressure can beans in quart jars (you could use pint) for already canned beans.

I've put beans on a cookie sheet in the freezer, then baged them.

If you have an issue with bloating, sprinkle a teaspoon of baking soda into the soaking water. I always rinse after the soak, before cooking. Have fun!

Ok question.....how long do you cook the beans after you soak them? On high or low?

They should be cooked on a medium low heat, hot enough to bubble, but not boil over. It will most likely take several hours. Watch for them to become soft... You can also sometimes test them by removing a few and blowing on them. Their skins will usually split when you do that if they are nearly done.
