Tomorrow I'm making the chicken cauliflower casserole dish. Will it be good to re-heat the next day for leftovers? I don't really do cauliflower so I'm venturing out and trying new stuff.

I haven't tried that. It sounds yummy! I guess I don't know for sure about the reheating, but I don't see why not. I think both cauliflower and chicken should be fine to reheat...

I posted this question on 3 different THM boards and only got this one response. Lol. Makes me wonder if people really eat cauliflower ? well, the answer to my question is YES, you can reheat it. It was actually much better the second night.

I eat cauliflower! Two of my favorite ways to use it in are in chicken soup and mashed cauli.

We eat cauliflower too! We love macafoni and cheese and roasted cauliflower.

I used to hate cauliflower before I started THM; now I love it!! I eat macofoni and cheese, loaded cauliflower casserole, fooled ya pizza, and a mock potatoe salad out of cauliflower. ?
