I've always made strawberry freezer jam and we love it. But it takes a ton of sugar. i dont know if i want to try stevia for a sweetener As my kids can usually taste Iit and d ok nit like it. Does anybody know if you can freeze the slim belly jelly? My recipe uses strawberries, fruit pectin, corn syrup, sugar, and lemon juice. What would.you all do?

I would replace the sugars with an erythritol/stevia mix. And make sure I used a pure pectin. The only pectin I am aware of that is not full of off plan ingredients is Pomona's. I think this should work for you, but I would still make a small trial batch to avoid wasting ingredients and till you get sweetener/pectin amounts right.
