I made a soup broth from ribs that I had cooked in the crock pot. I took out the meat and added non starchy vegetables (zucchini, squash, portabello mushrooms). I assume that if I add the meat back in (which is pretty fatty) I will have an S meal. I am wondering if I can add brown rice and beans to make it an E meal. I do not know exactly how much fat content is in the broth to do a calculation. Would someone please get me a rule of thumb or let me know if I'm reasoning this out wrong?

When you make broth from any kind of meat/bones you can refrigerate the skimmed broth. Then take off the fat which will be solid and floating on the top. Now you have a FP broth. From there you can 'build' your soup.

That is a good tip from Susie for making a fat free broth. Your meat and broth as it is without skimming and removing the fat would be an S. If you start your E soup with the broth once you have made it a FP, you could definitely add appropriate amounts of rice and beans for an E soup.
