Hi!
I've seen in the THM book (not the newer one) that it's not okay to eat olive oil when cooked, as it turns bad. But on pg.270 of the book, there is a flat bread recipe that has some olive oil in it and it's cooked at 350F. Is the oil fine to eat as long as it's not cooked up to a certain temperature? Would it be fine to cook the mayo (pg.413) at 350? It has a lot of olive oil in it.

You are right, olive oil is not the preferred cooking oil and is best used added on fresh. But there is no hard and fast rule that you can NEVER use it in a cooked dish. If you have a recipe using mayo, you've got mayo made with olive oil, I wouldn't sweat it! Mix, bake and eat up!
