I was browsing my Trim Healthy Table book recently, and while reading the tips about Cakes (pgs. 372-373) I was shocked to see Super Sweet described as being 3 times as sweet as Gentle Sweet. I've been using THM sweeteners since 2016, and have always considered Gentle Sweet to be 1/2 the sweetness of Super Sweet because that's how it was described in the official Sweetener Conversion Chart: SweetenerConversionChart.pdf (110.48 KB) One cup of sugar was replaced with 3 Tbs. Super Sweet or 6 Tbs. Gentle Sweet.
Has the potency of Gentle Sweet been modified since then? I just looked on the official THM website and downloaded the current version of the chart, published in 2017. THM.Sweetener-Conversion-Chart 2017.pdf (135.23 KB) As before, it states that Super Sweet is 4 to 5 times as sweet as sugar, but it now says Gentle Sweet is "1/3 as sweet as THM Super Sweet Blend". One Cup of sugar is still equal to 3 Tbs. Super Sweet, but it now indicates 9 Tbs. Gentle Sweet (NOT 6) is the appropriate conversion for one cup of sugar. Has the potency of THM Gentle Sweet been modified?
I also read there that a homemade version of Super Sweet should include 1 cup THM Erythritol and 1 rounded tsp. THM Stevia. In the original Sweetener Conversion Chart, homemade Super Sweet contained 1 cup erythritol to 1 tsp. stevia. Why the change? Is the THM stevia powder less sweet now than it used to be?
And this is a little beside the point, but... Pure Stevia Extract Powder is powerful. Just a small amount can make a significant difference (hence the need for doonks). One person's teaspoon is another person's rounded teaspoon, one person's rounded teaspoon is another person's heaping. I find it disappointing that such a subjective measure as "rounded" is used to set the standard with something like Stevia use.
Can anyone address my questions? Where do we go from here? If I'm buying and using THM Gentle Sweet, has it indeed changed and do I need to modify the Gentle Sweet measurements given in order to use it with recipes in the older THM cookbooks?
