If you have almond flour on hand, these muffins are so easy and quick. Great for a breakfast or snack. They easily adapt to flavors also. I made three different kinds here - blueberry and lemon, almond poppyseed, and plain. All in just a few minutes too. It mixes together so fast. The recipe makes 4 muffins, so I just did 3 batches to fill a regular sized muffin tin. They're more expensive than the Muffin In A Mug recipe from THM, or the other flax muffins in the book, but they're tasty, easy, and have a great texture. This is my preferred recipe for a low-carb muffin. Ingredients: almond flour (blanched is best), eggs, stevia, baking soda, apple cider vinegar Mix together 2 eggs, 1 Tbsp Truvia (or a few shakes of nustevia extract powder) and 1/2 tsp apple cider vinegar. Add 1 cup of almond flour and 1/4 tsp baking soda. Bake at 350 F for 15 minutes, or until slightly browned on the edges. Cool in the pan for 1/2 an hour. Makes 4 muffins. You can easily add flavors to this. Try adding frozen blueberries, and opt. lemon juice/ lemon zest/ lemon extract. Poppyseed and lemon/almond extract is one of my favorites. You could add cinnamon, and even sprinkle cinnamon and truvia on top of them for a treat. You could also add chopped nuts and banana extract. Try whatever flavors you like! I'll bet they would be great as ginger lemon muffins to accompany a soup. Let me know if you try any other great flavors!

Ooh. Gotta try these. We are not liking the Eazy Peazy muffins. I think it's just too much flax for us. Those are beautiful!

I will have to give these a try, but with hazelnut meal, since I have quite a bit on hand I enjoy the Eazy Peazy muffins, but changes are great.

The trickiest part would be leaving them to cool in the pan for half an hour :-) They look delicious!

These look great!! I think I will try some with ginger as I just found out I am preggie and get VERY sick, ALL day, for about the first 1/2 of my pregnancies. I have never found a way that I can try ginger seeing as I can not take pills during my sick months, as it just comes back (if I can even get it down).

Emily, all your food is so pretty. I might give these a try after we figute out if Levi is reacting to almonds. I think I will try to figure out a lemon berry flavor. That's a favorite of for the hubby.

Oh, my goodness. Made these this afternoon (with cocoa, coconut extract, cinnamon, tad coconut oil) and mmmmmmm! Don't judge me - I ate three in a row. Thank you thank you! Excited to try the recipe with other variations, too!

I want to make these so bad! Need to get into town for more almond flour, after I became pregnant I just couldn't eat the flax or whey either. They look wonderful

What's the serving size? Aren't almonds high in carbs? They look divine. I wanna make 'em now! Blanched almond flour has around 3g net carbs in 1/4 cup. You could have 1 or maybe even 2 of these muffins for S if you wanted to. They're quite filling, so one is probably enough.
