I would love a tried and true cheesy, yellow sauce to put over steamed brocolli. I did a quick check in the book and didn't see one. Maybe I missed it b/c it seemed like one was mentioned somewhere in there.

Look for Serene's transformer cheese sauce - it'd definitely on the fan page on facebook, but probably also somewhere here. It was not in the book since it's a more recent recipe.

I ended up finding out something that turned out pretty well. 1/4 cup butter 1/4 cup all-purpose flour 1/8 teaspoon paprika 1/2 teaspoon dry mustard 1/8 teaspoon black pepper 1/4 teaspoon salt 2 cups milk 1/3 cup cooking sherry 3/4 cup shredded Swiss cheese 1/4 cup shredded Cheddar cheese
Directions Melt butter in a medium saucepan over low heat. Stir in flour, paprika, mustard, pepper and salt. Pour in milk and sherry; cook, stirring constantly, until thickened. Stir in Swiss and Cheddar cheeses. Cook, stirring constantly, until melted and well blended. I left out the flour and added 1/2 tsp glucomannan w/the milk. Instead of milk I used 1/2 cream, 1/2 almond milk and I left out the Sherry b/c I wasn't sure about it. It was really quite good. The original recipe was from Allrecipes.com

I'm not sure about the 1/4 C of flour- maybe you could omit that and add gluccie instead? You could add in some Laughing Cow or light cream cheese to get the creaminess if you want to omit the flour and not use gluccie.

At the end of the recipe I put my replacements. I did replace the flour w/Gluccie and the milk w/Cream and almond milk.

There is also a cheese sauce recipe from the macafoni and cheese recipe in the book. The sauce you made, with the adjustments, seems tasty also. And yes, Serene's Transformer Cheese Sauce is so great. It's one of my favorites, especially with some Creole seasoning added.
