Ok, I am more of a purist like serene but as I am reading this book, I've been trying out some recipes. I decided this morning to make the muffin in a cup using my microwave. I NEVER use my microwave, but i was hungry, the kids were having oatmeal for breakfast and I needed something quick. Can I just say, YUM!! I was one happy mama this morning! It was huge and very filling, especially after I put two pats of butter on it. This will be something I can use occasionally! Just wanted to say thanks for making it easier for me to follow this way of eating

I love the muffin in a mug - and tried the cake in a mug for the first time last night - and it was even better, if that's possible! Loving eating this way!

Love the muffin in a mug here too. Make sure you try all the varieties they list as they are wonderful too. Love the banana nut and the cinnamon version(cinnamon w/cream cheese icing is awesome).

When I tried the cinnamon with cream cheese icing it reminded me of carrot cake! Will personally use a little less cinnamon next time, but it was sooo good!

If the microwave bothers you you can bake it in the oven for 8-12 minutes or put it in your Waffle Maker. That's what some of our non micro Mamas have done.

I don't have a microwave and read that you can bake this recipe in the oven. What type of container would you use? A mug is genearlly bigger than a ramekin and I would hate it to overflow into my oven.

You should be okay with an very large coffee Mug. I doubt it will spill over.

I guess I am somewhat in between Serene and Pearl. I have a microwave, but I just feel horribly guilty on the rare occasions that I use it.
