I grind my own oat groats and so have oat flour. I am assuming that I can use that in these 2 recipes (TH Pan Bread & TH Pancakes). For the TH Pancakes I have been using just 1 cup of oat flour. The batter is very thin, almost like a crepe batter....is this the right consistency? I am about to make the TH Pan Bread for lunch. I have never made it before and was wondering what the consistency of that is supposed to be. Maybe I need to add a little more oat flour but I don't want to overdo my carb intake. Thanks to anyone who can help!

The batter is supposed to be quite thick, but mine have sometimes turned out very thin also. I'm not sure what makes this happen. If you let it sit, perhaps overnight in your fridge, it should thicken nicely though. The trim healthy pan bread should be the same too. And grinding the oat groats to make flour should be fine, I think. And 1 cup of it sounds about right.

I just made the pancakes for the first time for my breakfast. Yum, yum, yum. I cooked them without any fat in a non stick skillet then put about a tsp of butter on top and a pile of raspberries sweetened with stevia. My tummy is very happy. I did find that my pancakes were on the thinner side, too. Next time I make them I think I'll leave the batter in the fridge overnight as Emily suggested.

I do let my batter sit in the fridge overnight and it doesn't seem to make a difference?

My batter is quite thick. The pancakes puff up while you cook them then thin down a bit while they cool.

Would it be OK to use more than 1 cup of oat flour? I have also tried just doing like the recipe says and and using oatmeal, but the results were the same.

BTW, I never did make the TH Pan Bread for my lunch today. I ended up having my youngest (19 months) come down with the stomach bug just as I was getting ready to make it. I actually blew it a little for lunch....but was right back on track at dinner! I need to be more disciplined in stressful moments like that. I am learning to rely on the Lord for my comfort, encouragement, etc instead of on food or other things. He is teaching me what it means to "pray without ceasing"(which is a COMMAND) by turning all my thoughts into prayers...what a journey, but a good one!

You could try a little more but not too much. I guess you are using ground oatmeal. I'm stumped, sometimes my batter is so thick I have to add water. Can you tell me your basic method for the recipe. You blend right?

I put everything into my Vita-Mix and blend away, till everything is smooth. When I make it using oatmeal I grind the oatmeal first and then add everything and blend.

So weird and I'm sure you're using 1 cup each of oats, cottage cheese and egg whites. How thin are we talking here?

I CAN'T BELIEVE IT! I think I know what I did. Every time I have made them I have always doubled the recipe...everything except the oats!!! I bet that's what I did. I still have some in the freezer, but I kinda want to try them again tomorrow, just to see if that's what I did!
Well, at least I know I'm not getting too many carbs when I eat those :-)!

I measure out my 1 cup of oats and then blend in my blender until it's flour, then add the egg whites and cottage cheese and blend more adding the other ingredients. It is very thin. Can't think of anything to compare it to other than soup. I have to pour it out very slowly onto a hot griddle so it doesn't spread to thin too fast. They taste great though!
