I made Pearl's version last night. I put it in a cereal bowl instead of a ramekin. I baked it for 15 minutes and there was a crust on too, but the rest of each was all mush. Not sure what happened.

Pearl...is that 2T or supposed to be 2t of cocnut flour. I was just wondering since coconut flour absorbs so much liquid! I made the original one in the post this morning with lemon extract and liked it so much better than the chocolate!! The chocolate one tasted like cardboard to me but maybe I didn't sweeten it enough?

Yes, I whipped the whites, sorry for not specifying. It turned out good, but a little on the moist side. Maybe it was my home-canned pumpkin. I found that my muffin in a bowls have been turning out nicer since I have started putting the ingredients in a seperate bowl and using my immersion blender with the whisk attachment and beating it real well. It is much more fluffy. I think by doing that it is turning out nicer than whipping the whites seperate and folding them in. Saves time, too. Now I even like the original recipe better since I started doing it that way. Plus I am putting it in a bowl that is twice the size as I used to so it is spread out more. It is a rectanglish corning bowl and works great. I still have to microwave them for 2 minutes, otherwise they are doughy and I dont like that on these cakes. I also started adding a shake of salt, because it seemed to be missing something. My kids love these, too!

I made the "white" muffin in bowl n topped it with Greek yo n strawberries n all the kids begged for one. So, I let them have it, only they used the whole egg. I probably could have put some oil in theirs, too. It turned out excellent.

strawberry version
3T oat fiber 3/4 tsp of gluc 1/2 tsp baking powder 1T greek ypgurt(optional) 1/4 cup egg whites 1/4 c pureed strawberries stevia to taste add a little water if too thick.
microwave 2 minutes
good by itself or topped with greek yogurt and berries or topped with a drizzle made of cream cheese, butter, stevia, and pureed strawberries.

Can I use unsweetened coconut shreds in my vitamix for a sub of coconut flour? Sarah Butcher Home ground coconut flour will not produce the same result. It is much more moist. You could experiment with it and come up with your own version with the home ground coconut, but it will be only for S. Store bought coconut flour is largely defatted.
