I tried a recipe from this site.... www.hungry-girl.com/newsletters/raw/249 called Fettuccine Hungry Girlfredo. {I made my own title in the subject line ;D} It calls for the tofu Konjac noodles [also known as shiratiki noodles]....but you can do the other ones without tofu. I made this for lunch today and it's pretty good. I am a texture person and wasn't too thrilled when I tried these noodles the first time in the ramen noodle recipe. But I find them much more tolerable in this recipe. One thing I found in searching how to cook them was to boil them till they softened to the consistency I wanted. They still have a slightly rubbery consistency but very bearable. If you don't want to go to the site the recipe calls for 1 pack of noodles [shirataki, konjac] 1 wedge of lite laughing cow cheese 2 tsp Parmesan cheese 1 tsp fat-free sour cream
I rinsed my noodles. Then boiled them for a few minutes. Then rinsed again.
I combined all the ingredients and put it in the microwave. But those of you who don't use a microwave could easily heat it on the stove.
For protein I cooked up some chicken and seasoned with creole seasoning.
I'll be making this again.

Have you tried re-heating this? I am looking for some fuel pull recipes that I can carry to work. I have a microwave, and I like to prepare my meals ahead. Just curious, thanks!

I didn't. However, if I were to make this to take to work I would put it all in container but not heat it up at all till I was ready to eat it.
Also, the next time I make this I am going to add an extra tsp or two of Greek yogurt. Also make sure you have some salt and pepper to season to taste. Some creole seasoning is good in it too.
