I JUST tried this recipe for the first time yesterday, and I love it! The kids requested more! I thought the stevia still a bit bitter, so I did half xylitol, and that was better.

I love that you added xylitol. I thought it was a bit bitter too. I will have to try that. I am hoping my "sweet" tastings change back to normal too and stevia will do the trick!

How long would these keep in the fridge?

several days I would imagine. Ours never make it that long, gone within couple of days as my children love them.

I made the choco pudding, and it was FAB!
Tips: I used my immersion blender, and made the pudding right in a wide mouth glass canning jar. I sprinkled the gluc in slowly while whirring with the immersion blender. When I finished, just like the book says, it was very watery.
Instant Pudding Tip: Then my 4 year old asked to add some frozen strawberries to it. So we put in about 5 small frozen berries, and used the immersion blender to whip them in, and it thickened up BEAUTIFULLY instantly, and was fantastic!

Andrea, sure you could add 1 tsp of peanut flour for FP. So glad you like those. Yes, even 2 tsp. should be fine for FP.

Serene, close your eyes and don't read this! I found a caramel flavoring at walmart near the vanilla extract. It isn't purist approved but none of the ingredients are serious no no's and I add that to my puddings and it is amazing! It's more butterscotch than caramel but I love it more!

I did not use Glucomman as not ordered any yet. I used Xanthan Gum so know it does not taste exactly like it should but it still was yummy. Tried the Lemon.

Mrsbskid, I need that caramel flavoring and don't have to close my eyes even. We won't tell Serene. Would have bought that today if I had read this thread first, was at Walmart this afternoon.

Yes, Andreahope! Another custard-aholic? I love that stuff! Like, every single night I eat it!! My husband enjoys it too if I leave out some gluc and its thick but more runny. It still gets all frothy and yum.

I tried the lemon the other day. The first night it was very tart....but I like tart. I put what I didn't eat in the fridge. When I ate it the next time [2 nights later] the flavor had mellowed to a very nice flavor.
So if you don't like very tart....make it a day or two before you eat it.
It took me at least 4 nights to eat the one batch....which is amazing any was left cause I usually like to snack at night. But I have found that switching to this way of eating has changed even my desire to snack and even the amount.
