Tonight for supper, my husband is grilling up some Adobo Chicken and I figured he wanted some cornbread. So I tried to E some cornbread and had some success! Okay here you go ladies!!
2 TBSP Cornmeal 1 TBSP Almond Meal 1 TBSP Flax Meal
2 TBSP Egg white 1 TBSP Applesauce
1/2 tsp baking soda
1/2 t truvia 1/2 t nunaturals nustevia
note: too sweet, next time add less, but my husband has a sweet tooth note: maybe more baking soda and a bit more cornmeal. Didn't rise a lot (it is cornbread after all, and could have used some more cornbreadyness to it.)
Overall: Success!!
AND I can further moisten it with the applesauce instead of butter. (we love applesauce on pancakes and toast around here)

Mrsfwdiv, sounds yummy! Just to clarify though, this recipe is Crossover. Cornmeal is very high in carbs, and the flax meal and almond meal are very high in fat. This is fine if your intent is to maintain or gain weight, but not if you are trying to lose.

Maybe you could try making this with quinoa flour instead of the fat flours??

Right, i forgot about that... dang it! I thought I had stumbled upon a genius solution. pooh. Okay, so will retry it. lol! I love cooking, it is such an adventure.

It happens to everyone! Way to not be deterred You could also try grinding up oats for flour.
