Ok, so my book hasn't arrived yet (I ordered it yesterday), but I think that I have read enough online about the THM guidelines and recipes to go ahead and get started. I had a baby two weeks ago and am always STARVING when I am breastfeeding, so I'm not sure how to tweak the diet to my needs...but I'm giving it a try and will adjust as I go if I need to. Here's what I had today:
Breakfast: 3-egg omlette with shredded Kerrygold cheese, sautéed spinach (S)
Snack: 1 square 85% dark chocolate, 1 square skinny chocolate (S)
Lunch: lettuce wraps with Kerrygold cheese, mayo and mustard, sliced radishes, about 1/2 c. plain Greek yogurt, frozen and topped with peanut butter sauce (S)
Snack: sprouted and dehydrated buckwheat, eaten like cereal with almond milk, blackberries and stevia (E, I think?? Not sure how buckwheat is classified)
Supper: baked chicken breast, sweet potato oven fries, salad with no dressing (E)
Snack: frappe made with almond milk, decaf coffee, cocoa, stevia, vanilla and ice
So...how does that look? I had stevia on hand already but won't be getting gluc or psyllium until I go the health food store next week (we live an hour away so I don't get there too often). I'm just trying to work with what I have for the time being.

That looks great! Sounds like you understand the plan very well. Buckwheat is E, yes. A serving is about a cup, cooked. Did your sweet potato fries have only 1 tsp of oil or less? About 4-6 grams of fat? Great job starting out.

Yep, the sweet potato fries just had a spritz of olive oil.
