So, I finally got this Coconut Breakfast Cake recipe right. :-) It took several tries, but I was always willing to eat my mess-ups. ;-) Coconut Breakfast Cake 2 tablespoons coconut flour 1/2 teaspoon baking powder 1/2 teaspoon cinnamon Pinch salt 2 teaspoons Truvia (I use homemade Truvia) 1/3 cup egg whites (2 egg whites) 1 tablespoon skim ricotta cheese 1 tablespoon almond milk 1/2 teaspoon vanilla 1/4 teaspoon banana extract (optional) Combine all in a mug or ramekin. Microwave for 1 minute or until done. I always bake mine at 350 for about 20 minutes in 2 6 ounce ramekins.
