This morning I had the most delicious breakfast, a Chocolate Muffin in a Mug. I just couldn't believe that *this* is how I get to eat while taking care of myself. So, so yum!!

This is how I actually ate the muffin..............with Strawberry Slim Belly Jelly!! Amazing.........

Looks so yummy. Did you use extra dark cocoa? I'm going to have to pour SB Jelly over mine sometime. I never thought of doing that.

Pearl......I used Hershey's 100% Cacao Special Dark cocoa powder. It did turn out very dark, but it wasn't burned at all. Funny story.........I excitedly told my husband about my yummy breakfast yesterday and showed him the pic on the camera. He looked kind of confused and said that it looked like a big hunk of charcoal. I was like, "What?!?!?". Then I looked at the picture again and realized that what he said was true, it did look like a charcoal briquette. Hahaha!!! Before that, I had just seen the yummy, dark, chocolately, velvetiness of it.  ))

Also, I thought of using the SBJ because I am so in love with the combination of chocolate and berries. I really likes the alternative to using butter and I got my chocolate-berry zing!!

Ha ha Andrea. I only thought that because I use the extra dark for my muffins too and that is what they look like. I guess it could look like a charcoal lump but not to me. Great idea on the SBJ, saving some cals instead of butter.

i like to thaw a few raspberries and mix them in a spoonful of greek yogurt with stevia and put that over my muffin. A little muffin and a little yogurt in each bit.

My 20 month old and I just split one of these, yum! The first I made for husband as his before-work snack. He looked at me and said "this is my snack? A brownie?" when I told him yes, and what was in it, he liked it! Though he said it was a bit bland, so the next one I made with a pinch of salt and the teeniest drizzle of vanilla. Much improved!

I've made these twice but can't get them cook all the way through! I used a 4 ounce Pyrex bowl for my "mug" and cooked in a toaster oven at 350. Even up to 12 minutes left most of the inside completely batter-like. Still yummy!!! But I would like to be able to eat it with my hands  I don't really have anything ceramic I could use, but do you think that would make a difference? Should I go out and buy ramekins? Or maybe bake at a higher temperature? Other thoughts?
