Having purist tendencies like Serene, I'd like to soak my Trim Healthy Pancakes, but there aren't any ingredients in the recipe that I usually see when soaking grains is required (lemon juice, apple cider vinegar, whey, etc). Not sure if adding a splash of ACV would affect the taste/consistency too much, or if it's even necessary? I read that oats have the highest content of phytates of all the grains, so I want to make sure they're more digestible for me, since I really like them but think I may have candida/leaky gut issues. Thanks!

Serene likes to make hers the night before and let it sit in the fridge overnight because it's more cultured that way. There is cottage cheese in it, but if that's not enough acid medium for you, you could replace some of it with some Greek yogurt. Feel free to let it soak as long as you want. It will thicken up though, so just thin it out as needed when you cook them.

Thanks! I was wondering this same thing. I'm hoping to open this thread up again aand expand a bit more. I have a friend who recently joined the THM world and she's doing great on it even with severe food restrictions! But anyhow, oats bother her so she was thinking of trying to soak her oats for easier digestion... but the THM pancakes (she LOVES pancakes!) aren't using soaked oats... and you have to blend them anyhow... can she makes these work for her??
