Chicken Gumbo
Serves: 4 Includes 10g of fiber in every 2cups with only 6g fat.
Ingredients: 1/4c. Brown Rice 1tsp. Olive Oil 1/2 yellow onion 2cloves garlic 1lb. boneless, skinless chicken breast 4c. water or chicken broth 28oz. canned diced tomatoes 10oz. frozen sliced okra 2 dried bay leaves(optional) 1tsp. dried oregano 1tsp. thyme 1/4tsp of salt and black pepper 2c. chopped kale (optional) 1/2c. frozen corn
Directions: 1. Cook the brown rice in a small saucepan according to package directions. 2. In a large saucepan add the olive oil and cook the onion, garlic, and chicken. Once the chicken is cooked add the 4c. water or broth. Add the tomatoes, okra, bay leaves (optional), and the remaining spices. 3. Bring to a simmer and cook stirring occasionally for about 5min. Add the chopped kale(optional), brown rice, and frozen corn. 4. Cook stirring occasionally for a minute or two until heated through. Discard bay leaves and serve.
This is an amazing recipe. I got this recipe from a clean eating magazine. The ingredients that I have listed as optional are things that I have never added to the recipe. Still this recipe is great.Sometimes to give the recipe an extra kick I add just a little of creole seasoning. My husband loves this recipe on cold days. It is also a great crock pot meal. Just be sure to add the kale towards the end of the cooking process when cooking it with the slow cooker. Enjoy!
