I made Trim Healthy Pancakes last week with some doubt as to how they would come out. I knew I would eat them but did not plan to serve them to anyone else. My husband came in from the barn, and saw them, "ooo pancakes for breakfast?" He ate 8! So I decided to try them on my 5 kids. The oldest looked at them and said, "mom you made skinny pancakes!" Skinny pancakes are Dutch pancakes that they roll up with sugar inside. They polished them all off! Thanks for a great, new recipe!

The first time I made the Trim Healthy Pancakes, I was skeptical. But after trying one, I was completely impressed! My entire family loved them! I top mine with 0% Greek yogurt mixed with Truvia and All Fruit Polaner jelly. I mix 3 Tbsp 0% Greek yogurt, 2-3 tsp Polaner, and 1-2 tsp Truvia to taste. This makes enough to top about 3 pancakes. Even my 7 year old daughter asks for them with this topping! They're delicious!

I cut up a small peach, add some frozen raspberries and heat them up til I can fork mash the peach. Yum!
