This is a favorite winter soup of mine, can someone tell me if this qualifies as as 'E' meal, ?
1 lb bonless skinless chicken breast, cut in pieces 2 sweet red peppers, chopped 2 cloves of garlic, minced 1 large onion chopped 1/2 pint salsa 1/2 tsp. salt 1/2 tsp. pepper 1 Tbsp. chili powder 1 tsp. ground cumin 1/8 tsp. red pepper 1/2 qt. undrained diced tomatoes 2 c. chicken broth 1 can kidney beans, rinsed and drained (I use black beans or chili beans sometimes)
Saute chicken, peppers, garlic and onion in a bit of oil until chicken is no longer pink, mix in other ingrediants and simmer. I always topped w/ a bit of sour cream, shredded chedder and crushed tortilla chips, but they could prly be omitted....

It is a great E so long as the oil used to sautee the garlic and onion is not much. Also, remember you wouldn't pile heaps of cheese on top of it for an E, but it looks yummy. You could top with a little Greek yogurt or lite sour cream and a few crumbled baked chips but better to leave off. Sprinkle with a very small amount of skim mozzeralla. I need a spell checker here LOL.

Thanks Pearl! The sour cream was my favorite garnish, I think greek yogurt will work just fine.

Made this tonight for dinner. YUM! The family was pleased and there's not a bite left. I topped it with a bit of lime juice and greek yogurt. Thanks for posting!

Just had Greek yogurt on my Ezekiel pita bread taco and couldn't tell it wasn't sour cream, yeehaw!
