Cinnamon Muffin in a Mug by Pearl and Serene

Have you tried this Frosted Cinnamon Muffin in a Mug yet? I've been sitting outside on this perfect Fall afternoon, enjoying this for my snack. I suddenly began to feel sorry for anyone not eating it! I snapped this picture of the goodness to urge you to try it. The recipe is on page 257 of Trim Healthy Mama but here are my recent tweaks with the yummy frosting recipe added:
Ingredients: golden flax meal * optional almond flour * egg * cinnamon * baking powder * coconut oil (or butter) * water * stevia extract powder or Truvia (either store bought or home made)
*Crack 1 egg into a coffee mug and whisk it well with a fork
*Add 3 Tbs. Golden Flax meal or 2 Tbs. Golden Flax Meal and 1 Tbs. Almond flour
*Add 1 scant Tbs. cinnamon
*Add 1 flat Tbs. coconut oil (or butter)
*Add 1 Tbs. water (this is optional but makes ingredients easier to stir and a less dry muffin)
*Add 3-4 tsp. of Truvia or 3-6 shakes of Pure Stevia extract (today I just used four good pinches of stevia extract)
*Add ½ tsp. baking powder (I use aluminum free)
*Stir vigorously until very well combined then nuke for 1 minute or bake at 350 in a ramekin for 10-15 minutes or until done. You can also use a muffin tray and fill two holes to make two medium muffins out of this mix. Pour water into the rest of the holes and this helps steam the muffin – yum!
Now for the frosting. I like LOTS of icing so to obtain a great combination of creamy sweetness, I use 1 part Cream cheese to 2 parts Greek yogurt. You can go two ways with the icing – either vanilla or lemon. I can never pick which one I like best so I usually alternate flavors each time I make this recipe but today I used vanilla. If you are dairy free, you can create delicious coconut glazes or frostings with coconut oil, stevia and extracts.
*Put 1 flat Tbs. cream cheese into a bowl (I use 1/3 less fat Philadelphia cream cheese)
*Add 2 heaping Tbs. of Plain Greek yogurt
*Add ½-3/4 tsp. vanilla or a few squeezes of fresh lemon juice or concentrate (fresh tastes best)
*Mix well with a fork
*Grind 3 tsp. of Truvia in a coffee grinder and add or shake in 3-6 shakes of pure stevia extract. If using only pure extract, stir and taste the icing after 2-3 shakes for your desired sweetness then add more, tasting as you go.
*Keep stirring with your fork until icing is smooth, cut your muffin in half and top each half generously – Enjoy!
None of these ingredients are hard to find. Most grocery stores sell golden flax meal or almond flour in their gluten free isles. Or grind your own from seeds.
