Trimmaccino – the coffee creamer dilemma is over!
I’m more excited about this new THM treasure than any other. Trimmaccino has forever changed my "food world" ... spun it around and spangled it into something so much more... more delightful... more comforting... more filling and more delicious. Today I want to share with you our simple "creamer" recipe that has bridged Pearl’s Trim Healthy Mama world with my own.
If you have been waiting on the Cranberry Sip drink, hold on… look for that right before Thanksgiving. Pearl and I have been sitting on this Trimmaccino recipe for months now and could hold back from sharing it with you no longer. Together we’ve honed and tweaked this little recipe and named it TRIMACCINO with much love and affection. It froths up like a latte but doesn't have any weird additional flavors that come uninvited in your cup. Best of all, it easily converts to all S, E, or FP meals. It screams "purity" for us health vigilantes yet gently says "this is easy and yummy" to the most tried and true Drive Thru Sues. But this creamer does not stop with coffee – you can make Hot Chocolates and creamy Chai or Roobios teas. Any steaming hot drink can be easily creamed the slimming Trimmaccino way.
You know from reading Trim Healthy Mama that I am the food purist in our author duo. Certain things that Pearl enjoys on plan with her laid back mindset… I simply can’t. A creamy cup of coffee has been one of them. My brain has not let me fully relax and enjoy a cup of coffee with pasteurized, store bought cream or half and half. But let me back up and tell you how this dilemma started… the full story of how Trimmaccino was born… I’ll try hard to be brief…
I never had one sip of coffee until I was 33 years old because I had been brainwashed into thinking it was akin to smoking for my health. All the extreme diet books I used to read (pre THM – most of them were vegan) assured me coffee was toxic and health depleting unless in the form of a coffee enema – and that sure doesn’t shout “relax and enjoy!” But eventually even the purist part of me could not deny the research and facts about the health benefits of coffee; it was no evil villain after all. I dove in and had my first delicious cup. It was love at first sip and has become my favorite taste sensation since.
I like my coffee strong with a touch of heavy cream to smooth the velvet depth. I started out buying organic cream from the store, but it broke my budget. Then I realized “organic” store bought cream is ultra- pasteurized while regular store bought cream is only pasteurized – was the term “organic” really cancelling out the ultra – pasteurization? That didn’t jive with me.
I tried raw cream skimmed off the top of our fresh milk. But have you noticed it is not as thick as store bought cream? So I always needed to use more than I wanted close to ¼ cup cream in my daily coffee is over board, I had to admit it. The other problem was - I was adding this raw cream to coffee that was just off the boil. This ended up heating it more than pasteurization did... so that really didn’t make sense. And I couldn’t always get my hands on raw whole milk. Again… back to the store for regular Wal-mart cream and feeling ever so UN-PURISTY like…. Eek!
In a perfect world, I like to have several creamy hot drinks a day especially in winter months – I longed for… no, I NEEDED the ultimate healthy creamer. So, the quest continued…
I tried canned coconut milk.... ummm, no thanks! It wasn't creamy when it landed in my coffee and tasted like sun-tan lotion coffee. I tried Unsweetened Almond milk ....worse. I tried the readymade creamers from the health food store....expensive grossness! I made different coconut oil/egg yolk concoctions that caused me to empty mug after mug into the sink. I detest oil pooling on top of my coffee with a vengeance. I was basically stuck with having to try and embrace store bought pasteurized cream again and again. How did Pearl look so peaceful drinking hers? My puristy brain would not allow me to relax.
For those of you who are not plagued with my zany purist DNA then don’t tune out, this topic is still of interest to you. Too much cream can be a real staller for some mamas who have stubborn weight. Cream is welcome on plan but so easy to overdo and a spot in your coffee can sometimes grow to an over generous poooooouuuuuuur If you’re like me and sometimes enjoy several creamy drinks per day, you might have a spot in your coffee… a spot in your chai... a spot in your hot chocolate... a spot in your after dinner decaf. Many spots equal a puddle.
My husband has a metabolism that is more negatively affected by constantly over creaming than my own and unfortunately he only likes his coffee to taste like a milk shake. My desperate search for the ultimate THM creamer was only more intensified when I’d hand him his morning Joe and he would go directly back to the kitchen to top it off with more cream… a RIVER of cream.
Another drawback to regular cream was that it kept me in S mode unless I had my coffee black and that never quite did the trick for me this way. To have an E breakfast I would have to go without coffee...poo poo!! We all need that energizing fuel of glucose as a change up for breakfast – my longing for creamy coffee was separating me from enjoying my needed E meals like oatmeal or quinoa – oh no!
Don't even get me started on the chemical, low fat, powdered creamers. Their ingredient list sounds like a foreign language from outer space.
Some of you reading this are neither Purists or have an over creaming problem. Some of you are just allergic or very sensitive to dairy and you too are seeking an answer to the "allusive creamer" issue. Trimmaccino may be the answer for you too.
You may have tried Bullet Proof coffee. Yep, me too. I love it but it has to be more like a special "now and thener" for me. A mug of that stuff has several hundred calories. It is no fun to drink up several hundred calories for breakfast and then be left with nothing to chew. I like to chew.
If I have Bullet Proof every morning then I am often too full for my breakfast, that’s not good for a nursing woman who runs around all day. But if I do include a good sized breakfast with it then the opposite can happen and it becomes really easy to overdo calories. We don’t dwell on calorie counts as Trim Healthy Mamas but we don’t need to abuse them either. The Bullet Proof coffee method was created for a Ketogenic diet where you consume only fats in the morning… no protein… no carbs… only this fat laden coffee creation. I am not downing this idea for a now and then morning treat drink and I am not saying that people who adopt this idea do not have weight loss success, but it is not the gentle and balanced approach we THM’s should aim for on a daily basis. We women need our protein in the mornings. The other drawback is that Bullet Proof coffee was costing me an arm and a leg to use that much grass fed, raw butter and oil in my coffee.
I told Pearl about my struggles and she agreed that we should leave no stone unturned to find a healthy creamer. She really wanted something to match her E meals as black coffee or almond milk coffee was not really cutting it for her either. Pearl's all in now. She still uses her store bought cream in her coffee now and then with her S meals but she actually prefers her Trimmaccino versions better. Unbelieveable that Pearl - the famous Short Cut Queen, creams her coffee the purist, superfoody way now… gives me a giggle. We are at a new level of peace between our differing styles of THM, even though they both achieve success. We've called a sister Truce.
Not only is Trimmaccino as pure as the driven snow but it burns calories to boot. It also provides quick energy that has nothing to do with whether your coffee is caffeinated or not. Wait there is more!! Trimmaccion boosts your immune system and fires up the brain. It is more than a creamer, it is a brain food. I will expound on all these claims soon so hold on to your hats. I don’t have room here. Tomorrow I’m going to give you some more Trimmaccino recipes including a Trimmy style Hot Chocolate and Chai. I’ll go into more health benefit details then. Today you get the main two – Trimmachino-Rich and Trimmachino-Light. Trimmaccino-Rich is more indulgent creaminess to pair with your S meals, Trimmaccino-Light goes with any meal at all yet is still fabulously creamy.
TRIMACCINO- RICH
Ingredients:
1 tsp. of MCT oil (flavorless medium chain triglycerides made from coconut oil)
1 tsp. of grass fed butter (Drive Thru Sue's can just use regular butter - no problem)
1 rounded tsp. of unsweetened pure whey protein powder
1 doonk of "Gluccie" (our nick-name for glucomannan) this amount is approximately 1/32 of a tsp. It gives an added creamy mouth feel. If you don’t have gluccie, leave this out as it is optional. We know some of you will ask if you can use xanthan gum instead but xanthan does not have the same incredible health benefits as glucomannan and we’d rather you not include a gum in your hot drinks several times a day. I have also noticed the inclusion of "Gluccie" helps with a nice slow release of caffeine and staves off any jitters.)
Directions:
*Put 12 oz. fresh, hot coffee into blender
* Add all ingredients except the whey powder and Gluccie and blend on low (do not add whey or gluccie before blending starts or you’ll get yucky chewy morsels of creamer that don’t blend in properly)
*Add whey and Gluccie while motor is running then turn blender on high for a few seconds.
DONE! WHIPPED! FROTHY AND FANTABULOUS!!!
(The above way is how my husband loves his TRIMMACHINO- RICH but I prefer substituting the butter with another tsp. of MCT because....I love the benefits of MCT oil and the silky mouth feel provided like nothing else can deliver. Alternatively if you do not have access to MCT oil or can't be bothered with the purchase then substitute the 1tsp. of MCT with another of pastured butter).
My hubby likes the little bit of butter in his "RICH" version as it does provide that dairy flare (most people with dairy or lactose issues can tolerate butter). I use KERRYGOLD salted butter from Wal-mart or any local grocer and it lasts us a long time because I only use it in our S coffee. We use the cheaper non-organic stuff for cooking or other purposes because there are 11 of us in our home and we cannot budget the "golden stuff" for everything until our cow gets going. We enjoy the salted version but you may prefer the unsalted kind. The tinsy bit of salt in the butter does not make my coffee taste at all salty.
The whey is used to help emulsify these super food fats and disperse them fully into the liquid so there is no longer oily hot water but a delicious creamed and frothy "CCINO". If you have an issue with whey and don't want to use it or you are just temporarily out, you can still make the Trimmaccino as long as you use the doonk (1/32 tsp.) of Gluccie. It will act like an emulsifier and help with a richer mouth feel. The result will be just a smidgen less incredible and won't froth up... it's still good though. Remember the whey we recommend is CFM Whey Protein isolate which is lactose free so again most people with dairy sensitivities can tolerate it.
TRIMMACCINO- LIGHT
This is the version you would choose for an E or FP meal (if you are new to our plan that means a lower fat meal). It is also the one I go for if I am creaming a drink in between meals or late at night. Honestly with the dusting of "Gluccie" it tastes almost as creamy as TRIMACCINO- RICH.
Ingredients:
1tsp. MCT oil (or exchange it for ½ tsp. of grass fed or regular butter)
1 "doonk" of "Gluccie" (1/32 tsp in total)
1 flat tsp. of Unsweetened Whey Protein
