For lunch I really wanted a sweet potato. I saw a recipe for a sweet potato lunch. I roast my sweet potato and made a salad to go with it. My potato is plain I like mine the way it is. Salad included white turkey breast, 1/3 c if diced cucumber, four small wedges of tomato, a small handful of alfalfa sprouts, 2 c of shredded romaine. Made my own balsamic vinaigrette. 1tsp evoo, 2 tsp balsamic vinegar, a small squirt of Dijon mustard, dash of garlic powder and a sprinkle of original salt free Mrs Dash seasoning. I think this is a great E meal. Just want to check.
