I guess I need to try these again, the first time I made them I thought they were awful. Everyone else seems to love them though, maybe something messed up the first batch.

Rashel, you may like them better with one of the suggested replacements for yogurt here on this thread. Something with a milder, less tart taste. I wasn't crazy about the yogurt.

The cottage cheese is definitely better than the yogurt and freezing them makes the taste and texture better

I made them again but didn't have cottage cheese so I used home made yogurt, they were ok but not great. I have cottage cheese now so need to make them again. Another question, mine always turn out very thin, is that normal?

Yes, they are thin. I use an 8 X 8 pan Sorry you having trouble with these! It's strange how some of the THM recipes that people rave about taste just awful to others....I have had this happen to me, too. I hope you end up liking it after all the trouble you are going through!

Thank you Nanci! I know it may just be one of those recipes I don't like but I'm not ready to give up I still haven't gotten to make them with cottage cheese but I plan to when I have time. I'll be sure to post when I do.

I kept at it with the skinny chocolate. I could not get it to taste good no matter what I did! But I'm glad I didn't give up. My neighbor shared some tips she had learned on the THM FB group (using peanut flour and PB so the xylitol wouldn't "sink") and now I LOVE skinny chocolate.

All of my family loved these!! I didn't even completely follow the recipe. Truvia is expensive, so we like to use as little as possible. I used 12-15 packets (teaspoons) of truvia, 1/2 cup baking stevia (from Walmart), and a couple dashes of NuStevia for sweetener.

I hear you about Truvia being expensive!
I've wondered what that baking stevia was like...is it Walmart brand? I know the Nunaturals Baking Blend has maltodextrin and dextrin in it, which are not THM approved.
What are the ingredients in the one you used?

Yes, mine is Walmart brand. Its basically the same thing as Stevia In The Raw. The ingredients, unfortunately are maltodextrin (listed 1st) and then stevia extract. But I try not to use it that much. Only in baking and sometimes in drinks.

Gotta do what you can do and can afford. My opinion is that it is still better than using sugar. I don't think anyone does the plan 100% perfectly, at least I don't do you like the texture of the baking blend?

Yeah, I don't do it perfect either. The artificial sweeteners is probably where I have a little bit of trouble. If it says "Sugar Free", I tend to think its ok, even though its loaded with artificial stuff. But I agree with you, I think its better than sugar. The texture is kind of like a really light powdered sugar. It looks like snow to me. Maybe a lot like Splenda? Here is a link to the one I use (just to show you what it looks like): link

Baking blend is off-plan and will cause a raise in blood sugar, of course you can choose it if you want to If you like using Truvia in baking a great idea is to make your own, you can get erythritol and stevia extract and do that, it is much, much cheaper. Also if you have a Costco most have Truvia now and it is on coupon for now
