I made THM pancakes for the first time this morning. They were delicious especially with added cinnamon! One thing, the book says the batter will be really thick. My batter was water thin. Also are the pancakes supposed to be super thin? I was wondering if maybe my baking powder was past its prime. Thoughts?

You know, this has happened to many people, and I'm not sure why. It happened to me the first time too, but never again. You can try mixing all the ingredients first EXCEPT the baking powder, then add the baking powder and mix on a low setting only until just blended. This could help.

2 things that have worked for me, blend ingredients together & let sit, they will thicken up. If I think about it, I blend it up and let it sit in the fridge overnight, give a quick blend before cooking & they are nice & thick. The pancakes themselves are fairly thin but not crepe thin. The other thing I've tried (I forget this option a lot but it does seem to work when I remember) is to add a small amount of gluccie to the batter, that helps thicken it up too.

Here's what I found works for me: I grind the oats and put in my bowl. I add the other dry ingredients to the oats. Then I blend the egg whites and cottage cheese. Gently mix this into the dry ingredients. Refrigerate overnight. It will thicken up, and I usually just give it a stir before frying. It may seem thick, but don't add any extra liquid. I also like to add a bit of vanilla.

I really enjoy 0% plain Greek yogurt sweetened with stevia and berries or a homemade berry syrup (just frozen berries heated up to mashable and hot and sweeten to taste, if I feel fancy I thicken with a bit of glucomannan). You could use a moderate amount of most fruits since it is E, I just tend to lean towards berries because I like them. Peaches or apples could be really yummy, with a bit of cinnamon, yum

Yes, I made them for the first time yesterday. The batter was thin and the pancakes didn't work out well in the frying pan. I ended up making 1 messed up pancake and 4 waffles. I threw away the rest of the batter, wasn't enough for a waffle. I used sugar-free syrup from Walmart.

I toss in another handful of oats if it is too thin. This recipe is so funny to me, I don't know if I pack the oats tighter sometimes or what but sometimes it is pretty thick and others pretty runny. This morning was the thick variety I like it as waffles as well and just cook the remaining even if not a full waffle iron portion I like making them up on our griddle as well.
