Pollo al La Crema. Dinner tonight (S) 3 chicken breasts, baked (I season it with salt, pepper, onion powder, garlic powder and paprika. Bake @ 350 for 45 min) 2 green bell peppers, sliced 1 onion, sliced 2 cups mushroom, cut in half 2 tbsp butter 3/4 c heavy whipping cream 2/3 c plain Greek yogurt Salt and pepper Bake chicken in the oven. 10 minutes before it is done- in a large skillet on med-high heat sauté onions, peppers and mushrooms. When onions start to turn translucent add cream. Simmer for 5-7 minutes. Add cut up chicken. Add Greek yogurt. Turn off heat. Serve with a plan approved tortilla.

I just made this for supper. Made up my own fajita seasoning to put on the chicken before baking. Making your own seasoning let's you control the salt. After baking the chicken I shredded it. I also added a little of the seasoning to the veggie mix after it was sauteed. Excellent recipe and thanks so much for sharing.
