A friend posted this on Facebook today. It looks awesome! I plan to try it as an E meal soon. I'm assuming it feeds about 4 or so, so the T of coconut oil would be less than 1 t per person. It looks great as an E with the subs you mentioned and skip the avocado. Add a lean protein either in it or on the side. Let us know how it turns out

I will! Could I add in a bit of rinsed lean ground beef? Or some quinoa or brown rice?

You could add lean gr beef & br rice or quinoa &/or black beans like Stephanie mentioned
