Week 2 and still craving carbs

I have the hardest time with E meals. How many carbs are we allowed in an E meal and an S meal, I haven't cooked any carbs with an S yet but I was wondering.
Also, what kinds of sandwiches are considered E? I like chicken and tuna salad but IDK if even low fat mayo would make that an S? Can I have cheese on an E or just meat and veggies??

I like to keep it simple and focus on the foods in categories So two slices of on plan bread with chicken or tuna and just a bit of light mayo, keep it to one serving mixed with your protein or sliced 96% or higher lean lunch meat and still have a small piece of fruit. You could spread a light Laughing Cow wedge or two on it instead of mayo as well. You could add low-fat or non-fat cheese, I personally don't (except maybe a bit of mozzarella)- it is worth it to me to have full fat cheese and just keep it S I like to enjoy a more generous amount of tomatoes in an E meal, that and pickles help them not to feel dry to me and/or mustard. I have seen mentioned using Greek yogurt in tuna and chicken salad, might be worth a try, won't be the same as mayo, but might be yummy.

What is wrong with fat free mayo with chicken, eggs or tuna on a Joseph's Pita? Wouldn't the fat free mayo make it an E? And full fat mayo would make it an S?

I'm not an expert so take my input with a grain of salt. Eggs, if they have the yolk would make the sandwich an S even if you used Fat Free Mayo. Without yolks it'd be an E. Chicken Salad made from Chicken Breasts would be an E if you used Fat Free Mayo. BUT the Joseph's Pita is a FP so you'd need to get an E fuel source from something like sprouted whole grain bread or a piece of fruit as a side. Or apple sauce. IF you stay with the Joseph's Pita, don't add an E fuel and limit the amount of meat (THM book lists the exact oz) you'll end up with a Fuel Pull. HTH
