Applesauce Spice Cake Mix Dry Ingredients: 1 cup Reg. Rolled oats. Grind to flour in blender. 1cup garbanzo flour 1 cup quinoa flour 1/2 cup erythritol 1tsp. NOW stevia extract 3 Tbs. cinnamon 1 tsp. nutmeg 2 tsp. ginger 1/4 tsp. grnd. cloves 1 tsp. salt 4 tsp. baking soda Blend: 1 cup 2% cottage cheese 3/4 cup or 6 eggwhites 2 Tbs. coconut oil Pour into Dry ingredients and add: 2 cups applesauce Stir. Pour into lightly greased 9X13 pan. Bake at 300 degrees till top has set and knife inserted near center comes out all most clean. Cake should not be gooey but is very moist. This is not real sweet. My kids think it should be sweeter. I am not sure of the proper serving size yet. I figure one piece 1/12- 1/16 of the recipe. But this would be if eaten as the full carb source. Wow - thank you for this recipe, rebekahrl! It was a huge hit - with the entire family. I added 1/2 tsp. more stevia, and subbed coconut flour for the garbanzo flour. What do you think? I didn't have garbanzo flour, but thought it had similar fat content to coconut flour (2 gm) - so why not? We ate it as a meal: 1/12 of a serving with a dollop of 0% greek yogurt and a sprinkle of cinnamon on top was perfect! Thanks so much!!!

Stacylynn, I'm glad you liked it! I don't know about the coconut flour... it's classed as an S food, but it might work still because the amount is small per serving? I'm not good with the numbers, I just stick to categories... I think you could also just increase the oat and quinoa flours. I like it with Greek yogurt, too. Another thing I like to do is to have a protein shake with.... I'm often 'starving', with nursing a baby and that helps me to not get a second piece and overdo on the carbs!

Well, I do believe you are correct! I should have gone to the book to reference the coconut flour. Lesson learned...do not rely on my knowledge alone. Next time I will use more of the approved flours or just grind some dried garbanzo beans. Live and learn!
Protein shake is a great option as a side. Even though my little guy stopped nursing over a year ago, I am a big eater. How old is your baby?
I am fondly known as the Carb Queen in my neck of the woods, so I have to be very careful as well.

That's what I do... just grind chickpeas. :-) My baby is almost 4 months old! :-) (She's a THM breastfed baby!).

My only issue with grinding the chickpeas might be the crazy looks I will receive. You know those little buggers are a hot commodity around here - everyone loves them roasted! Aaawww...4 months! I imagine she is beautiful and healthy! Good job, TH-mama!
