Fall back in love with Apple Butter! This Trim Healthy Mama version is thick and creamy and adds a moist sweetness to E foods. We need our good carbs Mamas! Sure, we THM’s enjoy our fats but God made fruit for a reason – let’s make wise use of it! THM Apple Butter is fabulous swirled into Greek Yogurt, on sprouted or sour dough toast, and of course … with Trim Healthy Pancakes (page 223). Apples are at their best and least expensive during this season and this is a great way to use up some of those "less than pretty" apples that your kids aren't too excited about eating. This recipe is simple enough for a Drive Thru Sue but pure enough for our Mamas who only eat whole food recipes. Ingredients: 3 Lbs (or 8 cups) of apples, peeled, cored and sliced. 2 tsp cinnamon (you could add other spices too) 2 Tbls lemon juice 1/4 tsp high mineral sea salt (like Celtic Sea Salt) Directions: *Cook on low for several hours, (crock pot or stove top works fine). *Once apples have cooked down quite a bit, pour into a blender or food processor and puree. Add a splash of vanilla and/or caramel extract and THM Pure Stevia Extract Powder until desired sweetness is reached. (The amount of sweetener needed will depend on the types of apples used). *Chill in refrigerator. ~from fanpage

Oh, how I love apple butter! I was considering altering my recipe this year with the subtraction of sugar and the addition of stevia. I like my apple butter sweet and spicy - with loads of cinnamon and smaller amounts of nutmeg, cloves, and ginger. I have never added lemon, salt, or extracts. All of these additions would greatly depend upon the type of apples and the ripeness of the fruit. Thank you for posting!!!

I've always added apple cider vinegar for the tang. And used honey and spices (used to). Maybe I'll get to make some stevia sweetened for me this year.
