When the weather outside is frightful, bring on hot, hearty soups. This recipe really scratches the “give me some hot, creamy, goodness” itch that these colder months bring on, without destroying health or figure.
I shamelessly rave about this recipe in our book which is bad mannered I’m sure but it’s hard not to get overly excited when recipes are delicious, easy and slimming so that’s my excuse. A few of our THM facebook friends have posted about it on our wall so I’m not the only one.

Tara said, "I made this recipe last week and it blew my hubby's mind. He could not believe there was no potatoes in the soup! I sprinkled a little chopped up ham on top and some green onions. We are eating SO GOURMET at our house since we got on the THM plan:)"

Carol said, "I think it's even better than potato soup! Since its just hubby and I, one recipe lasts a few days. And I change it up a bit using different low fat laughing cow cheese. That chipotle one is yummy! But I also love the garlic flavored one. This soup also works well as an appetizer to any meal, when you want a change from salad. It fills you up so you eat less. Thanks for sharing so many fabulous recipes, Serene and Pearl!"
The recipe is on page 295 and is so quick and easy to make. I put a little cheese on mine to have it as an S but it is also great as a Fuel Pull on its own. You could sprinkle with some Parmesan to keep within FP limits,
If you are like Serene and the idea of a Light Laughing Cow or Weight Watcher’s cheese wedge as an ingredient is not really up to your purism standards, I’m not going to get hurt feelings. Check out Serene’s new recipe called Transformer Cheese Sauce, which she posted on our page a few of days ago. It can be easily made into a similar soup, but has her purism seal all over it. Here’s what Emily another of our facebook friends had to say about Serene’s version:
“ Oh my goodness. Thank you so much for posting this, Serene.! I just made a fuel pull soup out of this with steamed cauliflower and some leftover mini meatloaf, and it was out of this world. Love it, love it, love it!”
