You want all on plan bread to be whole grain, then sourdough or sprouted normally. I don't see a whole wheat on their website (just took a quick look), since Subway's is whole wheat it is an exception in the book
I would go for the sprouted roll probably, it isn't ideal as something like Ezekiel, but I would probably stick to half since the soup has a good amount of E fuel or someone mentioned you can switch the bread for an apple.
I would eat about any of the options from the Hidden Menu if we had Panera, the hummus one might be a Crossover since hummus tends to be on it's own generally.

For Chipotle, I usually get their burrito bowl with no rice or beans and S ingredients and double meat.
Taco Bell cantina protein bowl is a crossover
McDonald's bacon ranch salad with grilled chicken (but order with a vinaigrette, as their ranch dressing is too carby)
"I'm on the road right now and just had dinner at Panera. I'd have to see the full info to confirm but I may have just managed an E (can you imagine): miso broth bowl with lentil, quinoa, brown rice, kale and chicken breast. It *seemed* very low fat. At worst it was a light XO."
