Cranberry Upside Down Cake ~Full Size Recipe
The single size cake was a huge hit this past week and we heard your call for a full size recipe. Here it is! This cake is gorgeous and delicious!
Topping: ~1/4 cup melted butter ~2 Tbs melted coconut oil (or more butter) ~1 Tbs grated or sliced orange rind ~2 Tbs Sweet Blend Fresh ~Grated Orange Rind ~Chopped Nuts (optional) ~fresh or frozen cranberries
For the Topping, melt the butter and oil and pour into the bottom of a round 9 inch pan. Sprinkle evenly with Sweet Blend and then evenly distribute cranberries to cover bottom. Add orange zest and nuts if desired.
Batter In a bowl, mix together: ~1/3 cup ground flax ~1/3 cup coconut flour ~1/3 cup almond flour ~2 tsp baking powder Crush up the clumps, mix well and set aside.
In a mixing bowl combine: ~3 eggs ~1/4 cup of melted butter ~1/3 cup of sour cream ~1 tsp vanilla ~1 tsp orange extract or grated orange rind (optional) ~1/4 cup of THM Sweet Blend ~Dash of high mineral salt
Blend above ingredients well, then add dry ingredients. Gently spoon batter over topping mix, distributing evenly. Bake at 350 for 30 minutes or until done. Invert onto flat plate or serving tray and spoon out any of the topping still clinging to the pan. Serve warm or cold. Double the recipe to make a 9x13 pan.
*For dairy free version, use Coconut oil or Dairy Free Butter Spread and leave out the sour cream, adding an extra egg or some almond milk to make up the difference in moisture.
This is soo good, I had to be some more cranberries to make another one I made it in a 8x8 pan and just cut/scooped it out since it was just for home, it would be so pretty inverted for a potluck or pretty family meal.

queen: Probably a good idea to start a topic asking about it. Generally, I think they want you to use the whole grains rather than something made from brown rice flour, but maybe there's more to know about it.

marmee: One question: if I have early morning coffee with coconut oil ( or if I choose cream) are they considered a snack, should I wait 3 hours before eating? If I eat an S meal soon there after am I ok? Would that be a problem if I eat an E meal soon after?

queen: If you eat an S meal within an hour of your oil/cream coffee, it is all considered the same meal. Otherwise, you need to wait the 3 hours.

queen: If you are in weight loss mode, you avoid them. Maybe throw in one or two a month if you aren't losing well. It can help to shake things up and get losses started again.
