My hubby is insistent on keeping our big Sunday brunch the same every week, with beef bacon, eggs, biscuits and gravy. I have a couple of recipes to try for making some S biscuits, but I can't find any alternatives for gravy. I may just make some for the rest of the family and pass on it for myself, but if someone has one, I'd love to try it! I might try making up my own, maybe with cream, but I'm better at tweaking than I am with creating from scratch. So, any S recipes out there for white gravy to go over biscuits?

Oh, yum! That sounds really good! Yeah, we don't do pork, but we'll be having beef bacon with it, so maybe I'll try that. Thanks so much!

Oh, also, my friend Laney (who has lost nearly 100 pounds on THM so far!!!) told me this in a text: "To make white gravy that is truly on plan, I make a roux with butter and a small amount of coconut flour (1 TBSP or so), then slowly add in my milk (I use a combo of unsweetened almond milk with heavy cream). I let it simmer to thicken. It will remain thin though, so I use a sprinkle (1/2 tsp) of glucomannan to get it to the right consistency, then season to taste......[certain times] I will use bacon fat rather than butter." She is really great at creating and tweaking recipes, so I guess I will have to try both!

Yesterday I made a white gravy for a taco casserole. I used 4 egg yolks to 4 cups cream. It's was thinner which I wanted, but if I was using it for biscuits, I'd add a bit of glucomannan. Only got the idea as I was cooking, that egg yolks would be a good option, just like in pudding!

That sounds great too, susieq! It sounds very similar to a "raw egg nog" recipe I have that is totally awesome. I will definitely try that one as well. Thank you!
