Oh man we just made a batch of Salted carmel pudding to try it and I'm head over heels for this one. It hit that salty yet sweet need I get every once in awhile. This was so easy and the flavor was great. I had to top it with just a twist from our salt shaker to put the little pink sprinkles on top just to feel pretty! Thanks for this great recipe.

Did you use a regular blender? Does yours have the same texture as regular pudding? I made this same pudding this week and was so disappointed. But I suspect it was that I used a Ninja instead of a blender.
I am glad you like it!

You could try adding a little more gluccie. Let it run for a good long time. It'll firm up more in the fridge too.

I want to try this pudding as I LOVE salted caramel flavor ( ) but I don't have any Gluccie Could I just use xanthum gum? I know it won't have the same health benefits though

I would try xanthum. It' all I had to use for my first 1-2 years.
