I need an alternative for the THM flour. I am hardly allergic to anything, but almond flour gives me a stomach ache and flax seed anything makes me violently sick. That only leaves the coconut flour! I'm wondering if there is anything I can add to the coconut flour? Been hearing more and more about Einkorn wheat, wondering if that might work. Any ideas? Thanks!

You could try making a mix from oat fiber, coconut flour and gluccie? There are some recipes floating around on the internet for different baking mixes, too.
The Einkorn wheat would be fine to use in an E setting as long as it is sprouted or soured.
