Hi, I have a few questions about Pear's Easy Meatloaf from the new cookbook. First, I was wondering if I can substitute anything for the Joseph's pitas? Could I use the same amount of almond meal or ground flax? Next, I was wondering if I could add a cup or a cup and a half of mozzarella cheese? Also, can I add some sugar free ketchup on top like on the Mama's Famous Meatloaf (the page before in the cookbook)? And last, should it be baked covered or uncovered? That was a lot of question for one recipe! Thanks for any help!

For the ground pitas I would sub a oat flour, oat fiber or baking blend. I haven't tried flax or almond meal in meat loaf so I'm not sure.
Adding cheese would be ok.
Sugar free ketchup sounds yummy.
I always bake my meat loaf uncoverered.
